藏品描述：筊白筍因感染黑粉菌並不開花，莖部開始不斷膨大，逐漸形成紡錘形的肉質莖，成為食用的茭白筍。
Zizania latifolia is grown as an agricultural crop that depends on the smut fungus Ustilago esculenta. The grass is grown for its stems, which swell into juicy galls when infected with the smut. When the fungus invades the host plant it causes it to hypertrophy. The pathogen prevents the plant from flowering and setting seed so the crop is propagated asexually, by rhizome. The galled stems are harvested as a vegetable.
